Ingredients

  • 1 cup long-grain white rice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 lemon (zest and juice)
  • Salt to taste
  • 2 cups water

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat olive oil over medium heat. Add mustard seeds and cumin seeds, stirring until they start popping (about 1 minute).
  3. Add the rinsed rice to the saucepan and sauté in the spiced oil for about 2 minutes. Pour in water and add salt to taste; bring to a boil.
  4. Once boiling, reduce heat, cover tightly, and let simmer for about 15 minutes. In the last minute of cooking, fold in lemon zest and juice.
  5. Remove from heat and let sit covered for another 5 minutes. Then fluff with a fork.
  6. Transfer to a serving bowl or plates, garnishing with fresh herbs if desired.
