- 1 cup long-grain white rice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 lemon (zest and juice)
- Salt to taste
- 2 cups water
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat olive oil over medium heat. Add mustard seeds and cumin seeds, stirring until they start popping (about 1 minute).
- Add the rinsed rice to the saucepan and sauté in the spiced oil for about 2 minutes. Pour in water and add salt to taste; bring to a boil.
- Once boiling, reduce heat, cover tightly, and let simmer for about 15 minutes. In the last minute of cooking, fold in lemon zest and juice.
- Remove from heat and let sit covered for another 5 minutes. Then fluff with a fork.
- Transfer to a serving bowl or plates, garnishing with fresh herbs if desired.
