  • 2 tsp salt
  • 1 tsp black pepper
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup whole berry cranberry sauce
  • 1/2 cup balsamic vinegar
  • 1 cup low-sodium beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves

Instructions

  1. Preheat your oven to 325°F (160°C). Season the beef chuck roast generously with salt and pepper.
  2. In a large Dutch oven over medium-high heat, add oil and sear the beef roast on all sides until browned (about 5 minutes). Remove from pot and set aside.
  3. In the same pot, add chopped onions and minced garlic. Sauté until softened and fragrant (about 5 minutes).
  4. Stir in cranberry sauce, balsamic vinegar, and beef broth into the onion mixture. Scrape up any brown bits from the bottom of the pot.
  5. Return the beef roast to the pot, add thyme and bay leaves, then cover tightly with a lid. Place in preheated oven for about three hours or until fork-tender.
  6. Let it rest for about ten minutes before slicing. Serve slices on plates drizzled with cranberry balsamic glaze.
