Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, granulated sugar, and salt until well combined.
  3. In another bowl, mix eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined—avoid over-mixing.
  5. Fill each cupcake liner two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Once cooled, use a small knife or cupcake corer to create holes in the center of each cupcake. Spoon raspberry jam into each hole generously.
  7. In a mixing bowl, beat softened butter until creamy. Gradually add powdered sugar while mixing on low speed; then add heavy cream and continue beating until fluffy. Add red gel food coloring for desired effect.
