Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp hot honey
  • 8 oz fettuccine or linguine
  • 1 cup heavy cream
  • 1/2 cup basil pesto (store-bought or homemade)
  • 1/2 cup crumbled feta cheese
  • 2 cups fresh Brussels sprouts, halved
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place halved Brussels sprouts cut-side down on the baking sheet. Drizzle with olive oil and sprinkle with salt.
  3. Roast for 20-25 minutes until golden brown and crispy.
  4. Season chicken breasts generously with Cajun seasoning.
  5. In a large skillet over medium-high heat, sear the chicken in olive oil for about 5-7 minutes per side until cooked through and golden brown. Remove from skillet and set aside.
  6. In the same skillet, pour in heavy cream while scraping up any delicious bits stuck to the pan. Stir in additional Cajun seasoning and simmer until slightly thickened.
  7. While making the sauce, cook pasta according to package instructions until al dente; drain.
  8. Toss cooked pasta into the creamy sauce along with sliced chicken pieces.
  9. Swirl in basil pesto mixed with crumbled feta before serving.
  10. Serve alongside crispy Brussels chips and drizzle with hot honey for an extra kick.
