- 2 tbsp Cajun seasoning
- 2 tbsp hot honey
- 8 oz fettuccine or linguine
- 1 cup heavy cream
- 1/2 cup basil pesto (store-bought or homemade)
- 1/2 cup crumbled feta cheese
- 2 cups fresh Brussels sprouts, halved
- 2 tbsp olive oil
- Salt to taste
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place halved Brussels sprouts cut-side down on the baking sheet. Drizzle with olive oil and sprinkle with salt.
- Roast for 20-25 minutes until golden brown and crispy.
- Season chicken breasts generously with Cajun seasoning.
- In a large skillet over medium-high heat, sear the chicken in olive oil for about 5-7 minutes per side until cooked through and golden brown. Remove from skillet and set aside.
- In the same skillet, pour in heavy cream while scraping up any delicious bits stuck to the pan. Stir in additional Cajun seasoning and simmer until slightly thickened.
- While making the sauce, cook pasta according to package instructions until al dente; drain.
- Toss cooked pasta into the creamy sauce along with sliced chicken pieces.
- Swirl in basil pesto mixed with crumbled feta before serving.
- Serve alongside crispy Brussels chips and drizzle with hot honey for an extra kick.
