- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 cup buffalo sauce
- 1 cup cottage cheese
- 1 cup chopped celery sticks
- 1/4 cup chopped green onions
- 1/4 cup blue cheese crumbles (optional)
Instructions
- 1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
- 2. Season chicken breasts with salt and pepper. Place them in the prepared baking dish and pour half of the buffalo sauce over them.
- 3. Bake for 25-30 minutes until cooked through. Allow to rest for 5 minutes before shredding into bite-sized pieces.
- 1. In a large mixing bowl, combine shredded chicken, remaining buffalo sauce, and cottage cheese. Mix well.
- 2. Serve generous portions in bowls, topping with chopped celery sticks and green onions. If desired, sprinkle with blue cheese crumbles.
