Description

  • 34 boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 1 can cream of chicken soup
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 sweet onion, diced
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Chop carrots, celery, and onion into bite-sized pieces.
  2. Place chopped vegetables at the bottom of the slow cooker. Add chicken breasts on top of the veggies.
  3. In a bowl, whisk together chicken broth and cream of chicken soup until smooth. Pour this mixture over the chicken and vegetables.
  4. Cover the slow cooker with its lid. Set it to low heat and cook for about 6 hours.
  5. About 30 minutes before serving, mix flour, baking powder, milk, salt, and pepper in a bowl until just combined.
  6. Spoon dollops of dumpling batter onto the bubbling stew in the slow cooker. Cover again and let steam for about 30 minutes until cooked through.
  7. Spoon portions into bowls, adding freshly cracked black pepper or parsley if desired.
