- 3–4 boneless, skinless chicken breasts
- 2 cups low-sodium chicken broth
- 1 can cream of chicken soup
- 2 medium carrots, sliced
- 2 celery stalks, chopped
- 1 sweet onion, diced
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Chop carrots, celery, and onion into bite-sized pieces.
- Place chopped vegetables at the bottom of the slow cooker. Add chicken breasts on top of the veggies.
- In a bowl, whisk together chicken broth and cream of chicken soup until smooth. Pour this mixture over the chicken and vegetables.
- Cover the slow cooker with its lid. Set it to low heat and cook for about 6 hours.
- About 30 minutes before serving, mix flour, baking powder, milk, salt, and pepper in a bowl until just combined.
- Spoon dollops of dumpling batter onto the bubbling stew in the slow cooker. Cover again and let steam for about 30 minutes until cooked through.
- Spoon portions into bowls, adding freshly cracked black pepper or parsley if desired.
