Ingredients

  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 (3-4 pounds) turkey crown
  • Salt and pepper for seasoning

Instructions

  1. In a bowl, combine softened butter, minced garlic, thyme, rosemary, parsley, lemon juice, salt, and pepper. Mix until fully combined.
  2. Preheat your oven to 350°F (175°C).
  3. Pat the turkey crown dry with paper towels.
  4. Gently loosen the skin over the breast area and spread half of the herb butter underneath it.
  5. Rub the remaining herb butter all over the outside of the turkey crown.
  6. Season generously with additional salt and pepper.
  7. Place the turkey in a roasting pan breast-side up.
  8. Roast for approximately 1 hour and 30 minutes or until it reaches an internal temperature of at least 165°F (75°C).
  9. Baste every 30 minutes with pan juices to keep it moist.
  10. Once cooked, remove from the oven and let it rest for at least 20 minutes before carving.
