Description

Indulge in tender roast pork drizzled with a rich blackberry sauce, offering the perfect blend of savory and sweet flavors that elevate any dining experience.

Ingredients

Scale
  • 1.5 pounds pork tenderloin
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme leaves
  • 1 cup blackberries (fresh or frozen)
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Pat the pork tenderloin dry with paper towels. Season generously with salt, pepper, and thyme on all sides.
  3. In a large oven-safe skillet over medium-high heat, heat olive oil until shimmering. Sear the pork on all sides until golden brown, about 4-5 minutes per side.
  4. Transfer the seared pork to the prepared baking dish.
  5. In a bowl, combine blackberries, honey, minced garlic, and balsamic vinegar. Mix gently without crushing the berries too much.
  6. Pour half of the blackberry mixture over the seared pork in the baking dish.
  7. Bake for about 20-25 minutes or until the internal temperature reaches 145°F (63°C).
  8. Allow the pork to rest for five minutes before slicing into medallions.
  9. Drizzle remaining blackberry sauce over each slice before serving.
