Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cups broccoli florets
  • 8 oz thick egg noodles
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Slice chicken breasts into bite-sized pieces.
  2. Heat a large skillet or wok over medium-high heat and drizzle with oil.
  3. Add chicken to the skillet and stir-fry until golden brown and fully cooked, about 5-7 minutes.
  4. Add minced garlic, bell peppers, and broccoli florets. Stir-fry until vegetables are vibrant and tender-crisp, about another 5 minutes.
  5. While cooking the vegetables, boil water in a separate pot. Cook egg noodles according to package instructions (around 4-6 minutes), then drain.
  6. Toss cooked noodles into the skillet with chicken and vegetables.
  7. Pour soy sauce and sesame oil over the noodle mixture. Use tongs to thoroughly combine so each noodle is coated.
  8. Serve hot, garnished with sesame seeds or chopped green onions if desired.
