- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cups broccoli florets
- 8 oz thick egg noodles
- 1/4 cup low-sodium soy sauce
- 1 tbsp sesame oil
Instructions
- Slice chicken breasts into bite-sized pieces.
- Heat a large skillet or wok over medium-high heat and drizzle with oil.
- Add chicken to the skillet and stir-fry until golden brown and fully cooked, about 5-7 minutes.
- Add minced garlic, bell peppers, and broccoli florets. Stir-fry until vegetables are vibrant and tender-crisp, about another 5 minutes.
- While cooking the vegetables, boil water in a separate pot. Cook egg noodles according to package instructions (around 4-6 minutes), then drain.
- Toss cooked noodles into the skillet with chicken and vegetables.
- Pour soy sauce and sesame oil over the noodle mixture. Use tongs to thoroughly combine so each noodle is coated.
- Serve hot, garnished with sesame seeds or chopped green onions if desired.
