Ingredients

  • 8 oz spaghetti
  • 1 lb lean ground beef or turkey
  • 1 packet taco seasoning (or homemade)
  • 14.5 oz can diced tomatoes
  • 1 medium onion, chopped
  • 1 bell pepper, chopped (any color)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream
  • Fresh cilantro, chopped

Instructions

  1. Brown the Meat: In a large pot over medium heat, add ground beef or turkey. Break it up with a spatula while cooking until browned (about 5-7 minutes). Drain excess fat if necessary.
  2. Sauté the Vegetables: Add chopped onion and bell pepper to the pot with the meat. Cook until softened (about another 3-4 minutes).
  3. Stir in Seasonings: Sprinkle taco seasoning over the meat and veggies. Stir well to coat everything evenly before adding diced tomatoes and about 2 cups of water.
  4. Add Pasta: Toss in uncooked spaghetti directly from the package. Cover and bring to a boil, then reduce heat and let simmer for about 10-12 minutes until pasta is tender.
  5. Cheese It Up: Once the pasta is cooked, stir in shredded cheese until melted.
  6. Serve with Toppings: Place portions on plates and top with a dollop of sour cream and fresh cilantro.
