Description

Indulge in the comforting flavors of Za’atar Roasted Halloumi & Autumn Veggies, featuring crispy halloumi cheese and a medley of tender roasted vegetables seasoned to perfection.


Ingredients

  • 8 oz halloumi cheese, sliced into thick slabs
  • 2 tsp za’atar spice blend
  • 2 medium sweet potatoes, chopped into bite-sized cubes
  • 1 lb Brussels sprouts, halved
  • 1 large red onion, sliced into wedges
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, combine chopped sweet potatoes, halved Brussels sprouts, and red onion wedges. Toss them onto the prepared baking sheet.
  3. Drizzle olive oil over the veggies, then sprinkle with salt, pepper, and za’atar. Toss until evenly coated.
  4. Place the sliced halloumi among the seasoned vegetables on the baking sheet. Drizzle with a little more olive oil.
  5. Bake in the preheated oven for 25–30 minutes. Stir gently halfway through to ensure even cooking.
  6. Once golden brown and sizzling, remove from the oven and transfer to plates or a serving platter. Optionally drizzle with extra za’atar before serving.
