- 1 lb fresh salmon fillets
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup carrots, thinly sliced
- 1/4 cup low-sodium soy sauce
- 2 tbsp honey or maple syrup
Instructions
- Chop the salmon into bite-sized pieces. Slice the broccoli, red bell pepper, and carrots.
- In a large skillet or wok, heat 1 tbsp oil over medium-high heat until hot.
- Add the salmon pieces to the pan. Sear for about 3 minutes on each side until golden brown and tender.
- Toss in the broccoli, bell pepper, and carrot slices. Stir-fry for an additional 4 minutes until just tender but still crisp.
- Drizzle the soy sauce and honey/maple syrup over everything. Stir well to coat, cooking for another 2 minutes until heated through.
- Transfer to plates or bowls and serve immediately with optional extra sauce.
