Description

Ingredients

  • 1 lb fresh salmon fillets
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup carrots, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey or maple syrup

Instructions

  1. Chop the salmon into bite-sized pieces. Slice the broccoli, red bell pepper, and carrots.
  2. In a large skillet or wok, heat 1 tbsp oil over medium-high heat until hot.
  3. Add the salmon pieces to the pan. Sear for about 3 minutes on each side until golden brown and tender.
  4. Toss in the broccoli, bell pepper, and carrot slices. Stir-fry for an additional 4 minutes until just tender but still crisp.
  5. Drizzle the soy sauce and honey/maple syrup over everything. Stir well to coat, cooking for another 2 minutes until heated through.
  6. Transfer to plates or bowls and serve immediately with optional extra sauce.
