  • 4 fresh cod fillets (about 6 oz each)
  • 3 tbsp miso paste (white or yellow)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey (or maple syrup)
  • 2 garlic cloves, minced
  • 2 cups fresh broccoli florets

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together miso paste, soy sauce, honey, and minced garlic until smooth.
  3. Place cod fillets on the prepared baking sheet and brush both sides generously with the marinade.
  4. Roast the cod in the preheated oven for about 12-15 minutes until it flakes easily with a fork.
  5. While the cod roasts, bring a pot of water to boil.
  6. Blanch broccoli florets for about 3 minutes until bright green but still crisp.
  7. Drain broccoli and immediately rinse under cold water to stop cooking.
  8. Serve cod alongside broccoli and drizzle any remaining teriyaki miso sauce over both.
