Description

Swedish Meatball Soup is a creamy, comforting bowl filled with tender meatballs that will warm your heart and delight your taste buds on chilly days.


Ingredients

  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1/2 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 cups low-sodium beef broth
  • 1 cup heavy cream
  • 2 tbsp fresh dill, chopped

Instructions

  1. In a large mixing bowl, combine ground beef, panko breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until just combined.
  2. Roll small portions of the mixture into bite-sized balls about an inch in diameter. Place them on a baking sheet lined with parchment paper.
  3. In a large pot over medium heat, add a splash of oil and brown the meatballs on all sides for about five minutes. They do not need to cook through yet.
  4. Remove the browned meatballs and set aside. In the same pot, add beef broth and bring it to a simmer while scraping up any flavorful bits from the bottom.
  5. Stir in heavy cream and chopped dill once simmering. Return the meatballs back into the pot and let everything simmer together for another ten minutes.
  6. Serve hot in bowls garnished with extra dill if desired.
