  • 1/2 cup sun-dried tomatoes, finely chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) to taste
  • 1 pound pork tenderloin

Instructions

  1. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  2. Stir in chopped spinach and sun-dried tomatoes; cook until spinach is wilted.
  3. In a bowl, mix sautéed veggies with breadcrumbs, parmesan cheese, salt, pepper, and herbs until well combined.
  4. Preheat your oven to 375°F (190°C).
  5. Carefully slice the pork tenderloin lengthwise without cutting through completely.
  6. Fill the cavity of the tenderloin with the stuffing mixture and secure it with toothpicks or kitchen twine.
  7. Heat more olive oil in an oven-safe skillet over high heat and sear each side of the stuffed tenderloin until golden brown (about 3 minutes per side).
  8. Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the internal temperature reaches at least 145°F (63°C).
