- 1 cup breadcrumbs

- 2 tbsp olive oil

- Fresh herbs (like thyme or rosemary) to taste
- 1 pound pork tenderloin
Instructions
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
- Stir in chopped spinach and sun-dried tomatoes; cook until spinach is wilted.
- In a bowl, mix sautéed veggies with breadcrumbs, parmesan cheese, salt, pepper, and herbs until well combined.
- Preheat your oven to 375°F (190°C).
- Carefully slice the pork tenderloin lengthwise without cutting through completely.
- Fill the cavity of the tenderloin with the stuffing mixture and secure it with toothpicks or kitchen twine.
- Heat more olive oil in an oven-safe skillet over high heat and sear each side of the stuffed tenderloin until golden brown (about 3 minutes per side).
- Transfer the skillet to the preheated oven and roast for about 25-30 minutes or until the internal temperature reaches at least 145°F (63°C).
- Allow to rest before slicing and serve.
