- 1 package (17.3 oz) puff pastry sheets, thawed
- 1 egg, beaten (for egg wash)
- 2 cups fresh baby spinach
- 1 cup crumbled feta cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat 1 tbsp olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté for about 5 minutes until translucent.
- Add fresh spinach to the pan and stir until wilted, around 2 minutes. Season with salt and pepper.
- Remove from heat and fold in crumbled feta cheese until combined.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out thawed puff pastry sheets on a lightly floured surface. Cut into squares or circles large enough to hold filling.
- Place about 1 tablespoon of filling in each pastry piece, fold over, and seal edges as desired.
- Brush the tops with beaten egg for a golden finish.
- Bake for 15-20 minutes or until puffed up and golden brown.
