Ingredients

  • 1 package (17.3 oz) puff pastry sheets, thawed
  • 1 egg, beaten (for egg wash)
  • 2 cups fresh baby spinach
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat 1 tbsp olive oil in a pan over medium heat. Add chopped onion and minced garlic. Sauté for about 5 minutes until translucent.
  2. Add fresh spinach to the pan and stir until wilted, around 2 minutes. Season with salt and pepper.
  3. Remove from heat and fold in crumbled feta cheese until combined.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Roll out thawed puff pastry sheets on a lightly floured surface. Cut into squares or circles large enough to hold filling.
  6. Place about 1 tablespoon of filling in each pastry piece, fold over, and seal edges as desired.
  7. Brush the tops with beaten egg for a golden finish.
  8. Bake for 15-20 minutes or until puffed up and golden brown.
