  • 1/4 cup fresh parsley, chopped
  • 1 small onion, finely grated
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • 1/4 cup pomegranate molasses
  • 1/2 cup fresh pomegranate seeds

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground lamb, chopped parsley, grated onion, minced garlic, ground cumin, ground cinnamon, salt, and pepper.
  3. Mix by hand until just combined; avoid overmixing.
  4. Wet your hands slightly and shape the mixture into oval-shaped patties (about six inches long).
  5. Place the shaped koftas on the prepared baking sheet and bake for 20-25 minutes or until golden brown and cooked through.
  6. While the koftas are baking, mix together pomegranate molasses and fresh pomegranate seeds in a small bowl. Stir gently to combine.
