Description

Savor tender, slow-cooked beef in a smoky sauce, perfect for sandwiches, tacos, or served over rice. This crowd-pleasing dish is ideal for gatherings and weeknight dinners.


Ingredients

  • 3 lbs chuck roast
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tsp smoked paprika
  • 2 tbsp Worcestershire sauce

Instructions

  1. Chop the onion and mince the garlic.
  2. In a large skillet over medium-high heat, add a splash of oil. Sear each side of the chuck roast until golden brown, about five minutes per side.
  3. In a bowl, combine ketchup, brown sugar, smoked paprika, Worcestershire sauce, beef broth, minced garlic, and chopped onion until well mixed.
  4. Place the seared chuck roast into a slow cooker and pour the sauce over it. Cover and cook on low for about eight hours or high for four hours until tender.
  5. Once cooked through and tender enough to shred easily with two forks, shred the beef into strands and mix back into the juices.
  6. Serve on toasted buns or over rice with extra sauce drizzled on top.
