- 3 lbs chuck roast
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tsp smoked paprika
- 2 tbsp Worcestershire sauce
Instructions
- Chop the onion and mince the garlic.
- In a large skillet over medium-high heat, add a splash of oil. Sear each side of the chuck roast until golden brown, about five minutes per side.
- In a bowl, combine ketchup, brown sugar, smoked paprika, Worcestershire sauce, beef broth, minced garlic, and chopped onion until well mixed.
- Place the seared chuck roast into a slow cooker and pour the sauce over it. Cover and cook on low for about eight hours or high for four hours until tender.
- Once cooked through and tender enough to shred easily with two forks, shred the beef into strands and mix back into the juices.
- Serve on toasted buns or over rice with extra sauce drizzled on top.
