- 3 lb chuck roast
- 1 cup beef broth (low-sodium)
- 1 large onion (chopped)
- 4 cloves garlic (minced)
- 1 cup ketchup
- 1/2 cup Worcestershire sauce
- 2 tbsp smoked paprika
- 1/4 cup brown sugar
- Salt and pepper to taste
Instructions
- Chop the onion and mince the garlic.
- In a hot skillet, sear each side of the chuck roast until golden brown. Set aside.
- In the same skillet, add oil if needed and sauté onions until translucent. Add minced garlic toward the end to prevent burning.
- In a bowl, combine ketchup, Worcestershire sauce, smoked paprika, brown sugar, salt, and pepper. Whisk until smooth.
- Place the seared roast into the slow cooker along with sautéed onions and garlic. Pour the sauce over all ingredients.
- Cover with a lid and cook on low for about 8 hours or until beef shreds easily with forks.
- Transfer to plates or buns, drizzle with additional sauce, and enjoy!
