Ingredients

  • 3 lb chuck roast
  • 1 cup beef broth (low-sodium)
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup ketchup
  • 1/2 cup Worcestershire sauce
  • 2 tbsp smoked paprika
  • 1/4 cup brown sugar
  • Salt and pepper to taste

Instructions

  1. Chop the onion and mince the garlic.
  2. In a hot skillet, sear each side of the chuck roast until golden brown. Set aside.
  3. In the same skillet, add oil if needed and sauté onions until translucent. Add minced garlic toward the end to prevent burning.
  4. In a bowl, combine ketchup, Worcestershire sauce, smoked paprika, brown sugar, salt, and pepper. Whisk until smooth.
  5. Place the seared roast into the slow cooker along with sautéed onions and garlic. Pour the sauce over all ingredients.
  6. Cover with a lid and cook on low for about 8 hours or until beef shreds easily with forks.
  7. Transfer to plates or buns, drizzle with additional sauce, and enjoy!
