- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1 cup BBQ sauce
- 2 tablespoons smoked paprika
- 0.5 teaspoon cayenne pepper
- 1 cup apple cider vinegar (as a non-alcoholic substitute)
- Salt and pepper to taste
Instructions
- Sear the Beef: Pat the chuck roast dry and season generously with salt and pepper. In a skillet over medium-high heat, heat oil and sear the roast on all sides until golden brown, about three minutes per side.
- Prepare Aromatics: In the same skillet, add sliced onions and minced garlic after removing the roast. Sauté until fragrant and slightly caramelized, about five minutes.
- Combine Ingredients in Slow Cooker: Place the seared roast into your slow cooker. Add sautéed onions, garlic, apple cider vinegar, BBQ sauce, smoked paprika, and cayenne pepper. Stir gently to coat the meat.
- Set it & Forget it: Cover your slow cooker and cook on low for eight hours or high for four hours until tender.
- Shred & Serve: Remove the roast from the slow cooker and shred it using two forks. Return shredded beef back into the sauce for added flavor before serving.
