  • 1 large onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup BBQ sauce
  • 2 tablespoons smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 cup apple cider vinegar (as a non-alcoholic substitute)
  • Salt and pepper to taste

Instructions

  1. Sear the Beef: Pat the chuck roast dry and season generously with salt and pepper. In a skillet over medium-high heat, heat oil and sear the roast on all sides until golden brown, about three minutes per side.
  2. Prepare Aromatics: In the same skillet, add sliced onions and minced garlic after removing the roast. Sauté until fragrant and slightly caramelized, about five minutes.
  3. Combine Ingredients in Slow Cooker: Place the seared roast into your slow cooker. Add sautéed onions, garlic, apple cider vinegar, BBQ sauce, smoked paprika, and cayenne pepper. Stir gently to coat the meat.
