Instructions
- 1. Place the boneless, skinless chicken thighs in the bottom of your slow cooker. Season lightly with salt and pepper if desired.
- 2. Add minced garlic and ginger to the slow cooker.
- 3. In a separate bowl, whisk together soy sauce, brown sugar, and rice vinegar until well combined.
- 4. Pour the sauce mixture over the chicken in the slow cooker.
- 5. Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
- 6. Once cooked, shred the chicken using two forks directly in the slow cooker and stir to coat in sauce. Serve over steamed rice or noodles, drizzling extra sauce on top as desired.
