  • 1 lb Andouille sausage (sliced)
  • 1 lb large shrimp (peeled and deveined)
  • 1 cup long-grain rice
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 3 cups low-sodium chicken broth
  • 1 medium onion (chopped)
  • 1 cup green bell pepper (diced)
  • 1 cup red bell pepper (diced)
  • 4 cloves garlic (minced)
  • 2 tbsp Cajun seasoning
  • Olive oil for sautéing

Instructions

  1. Heat a splash of olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and bell peppers, sautéing for about five minutes until softened.
  2. Stir in minced garlic and sliced Andouille sausage. Cook for around three minutes until the sausage begins to brown, enhancing its smoky flavor.
  3. Add long-grain rice to the pot along with canned diced tomatoes and Cajun seasoning. Stir well to coat the rice with spices.
  4. Gradually pour in chicken broth, bringing the mixture to a gentle simmer. Allow it to cook on low heat for approximately twenty minutes until the rice absorbs most of the liquid.
  5. When the rice is nearly cooked, gently fold in shrimp. Cook until they turn pink and opaque, about five minutes.
  6. Remove from heat and let rest covered for an additional five minutes before serving. Garnish with fresh parsley if desired.
