- 1 lb Andouille sausage (sliced)
- 1 lb large shrimp (peeled and deveined)
- 1 cup long-grain rice
- 1 can (14.5 oz) diced tomatoes (with juices)
- 3 cups low-sodium chicken broth
- 1 medium onion (chopped)
- 1 cup green bell pepper (diced)
- 1 cup red bell pepper (diced)
- 4 cloves garlic (minced)
- 2 tbsp Cajun seasoning
- Olive oil for sautéing
Instructions
- Heat a splash of olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and bell peppers, sautéing for about five minutes until softened.
- Stir in minced garlic and sliced Andouille sausage. Cook for around three minutes until the sausage begins to brown, enhancing its smoky flavor.
- Add long-grain rice to the pot along with canned diced tomatoes and Cajun seasoning. Stir well to coat the rice with spices.
- Gradually pour in chicken broth, bringing the mixture to a gentle simmer. Allow it to cook on low heat for approximately twenty minutes until the rice absorbs most of the liquid.
- When the rice is nearly cooked, gently fold in shrimp. Cook until they turn pink and opaque, about five minutes.
- Remove from heat and let rest covered for an additional five minutes before serving. Garnish with fresh parsley if desired.
