- 3–4 boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 1/2 cup BBQ sauce
- 1 tsp garlic powder
- Salt and pepper to taste
- 4 medium sweet potatoes, peeled and chopped into bite-sized chunks
- 2 tbsp extra virgin olive oil

Instructions
- 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. Place the chicken breasts on one side of the baking sheet. Drizzle with olive oil and season with salt, pepper, and garlic powder. Generously coat with BBQ sauce.
- 3. In a separate bowl, toss the chopped sweet potatoes with olive oil, salt, and pepper until evenly coated.
- 4. Spread the seasoned sweet potatoes on the other side of the baking sheet.
- 5. Bake in the preheated oven for 25-30 minutes until chicken is cooked through (165°F or 74°C) and sweet potatoes are tender and caramelized.
- 6. Serve warm, drizzling additional BBQ sauce on top if desired.
