Ingredients

  • 1.5 lbs steak tips (sirloin or ribeye)
  • 4 cloves fresh garlic
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 cup bell peppers (mixed colors), chopped
  • 1 medium zucchini, sliced into rounds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the bell peppers and slice the zucchini into rounds. Set aside.
  3. Slice off the top of a whole head of garlic, drizzle it with olive oil, wrap it in foil, and place it in the oven.
  4. In a bowl, combine steak tips with olive oil, minced roasted garlic, rosemary, thyme, parsley, salt, and pepper. Let marinate for about 15 minutes.
  5. Spread marinated steak on one side of a baking sheet and add vegetables to the other side. Drizzle everything with additional olive oil.
  6. Roast for about 20-25 minutes until steak is cooked to desired doneness and vegetables are tender.
  7. Transfer to serving plates or a platter and garnish with extra herbs if desired.
