- 1 pound steak tips (sirloin or flank)
- 3 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 bunch asparagus, trimmed
- 1 whole head of garlic
Instructions
- Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick spray.
- In a bowl, mix steak tips with olive oil, salt, pepper, thyme, and rosemary until well-coated. Let marinate while preparing vegetables.
- Cut off the top of the garlic head, drizzle with olive oil, and wrap in foil.
- Mix chopped bell pepper, zucchini slices, and asparagus in a bowl with olive oil, salt, and pepper.
- Place seasoned steak on one side of the baking dish and arrange mixed veggies on the other side. Add wrapped garlic to the dish.
- Roast for about 20-25 minutes until cooked through.
- Allow to rest for a few minutes before serving. Squeeze roasted garlic over steak tips before serving for added flavor.
