Ingredients

  • 1 pound steak tips (sirloin or flank)
  • 3 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 bunch asparagus, trimmed
  • 1 whole head of garlic

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking dish with nonstick spray.
  2. In a bowl, mix steak tips with olive oil, salt, pepper, thyme, and rosemary until well-coated. Let marinate while preparing vegetables.
  3. Cut off the top of the garlic head, drizzle with olive oil, and wrap in foil.
  4. Mix chopped bell pepper, zucchini slices, and asparagus in a bowl with olive oil, salt, and pepper.
  5. Place seasoned steak on one side of the baking dish and arrange mixed veggies on the other side. Add wrapped garlic to the dish.
  6. Roast for about 20-25 minutes until cooked through.
  7. Allow to rest for a few minutes before serving. Squeeze roasted garlic over steak tips before serving for added flavor.
