Experience the festive delight of a Red Velvet Christmas Cake, featuring moist layers and creamy frosting that will make your holiday gatherings truly special.

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round (9-inch) cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt until well combined.
  3. In another bowl, mix together the vegetable oil, sugar, eggs, buttermilk, vanilla extract, and red food coloring until smooth.
  4. Gradually add the dry ingredients to the wet mixture using an electric mixer at low speed until just combined.
  5. Divide the batter evenly between the prepared cake pans and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow cakes to cool in pans for ten minutes before transferring them onto wire racks to cool completely.
  7. In a mixing bowl, beat softened cream cheese and butter together until smooth and creamy.
  8. Gradually add powdered sugar and vanilla extract; mix until well blended.
  9. Once cooled, spread cream cheese frosting generously between layers and on top of the cake.
  10. Serve at your holiday gathering or enjoy a slice yourself!
