Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

Instructions

  1. In a large bowl, combine peanut butter and softened butter until smooth.
  2. Gradually add powdered sugar and vanilla extract, blending until well mixed and thick enough to roll into balls.
  3. Scoop out small portions of the mixture and roll into balls about one inch in diameter. Place on a parchment-lined baking sheet.
  4. Chill the baking sheet with the peanut butter balls in the refrigerator for about 30 minutes until firm.
  5. Melt chocolate chips in a microwave-safe bowl at medium power in increments of 30 seconds until smooth, stirring gently to avoid burning.
  6. Dip each chilled peanut butter ball into melted chocolate using a fork, allowing excess chocolate to drip off before placing back on parchment paper. Let set at room temperature or chill again until firm.
