Instructions
- In a large bowl, combine peanut butter and softened butter until smooth.
- Gradually add powdered sugar and vanilla extract, blending until well mixed and thick enough to roll into balls.
- Scoop out small portions of the mixture and roll into balls about one inch in diameter. Place on a parchment-lined baking sheet.
- Chill the baking sheet with the peanut butter balls in the refrigerator for about 30 minutes until firm.
- Melt chocolate chips in a microwave-safe bowl at medium power in increments of 30 seconds until smooth, stirring gently to avoid burning.
- Dip each chilled peanut butter ball into melted chocolate using a fork, allowing excess chocolate to drip off before placing back on parchment paper. Let set at room temperature or chill again until firm.
