Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop the carrots and celery into small pieces, and mince the garlic.

  3. Add boneless skinless chicken thighs to the pot along with salt and pepper. Cook until no longer pink (approximately 6-8 minutes).
  4. Pour in the chicken broth, bring to a boil, then reduce heat to low. Let it simmer uncovered for about 20 minutes.
  5. Stir in heavy cream and dried thyme. Simmer for an additional five minutes until heated through.
  6. Ladle soup into bowls and garnish with fresh parsley if desired. Enjoy with crusty bread for dipping!
