- 2 medium carrots, chopped
- 2 stalks celery, chopped

Instructions
- Chop the carrots and celery into small pieces, and mince the garlic.
- In a large pot over medium heat, add a splash of olive oil. Sauté chopped carrots and celery until tender (about 5 minutes). Add minced garlic and stir until fragrant (about 1 minute).
- Add boneless skinless chicken thighs to the pot along with salt and pepper. Cook until no longer pink (approximately 6-8 minutes).

- Stir in heavy cream and dried thyme. Simmer for an additional five minutes until heated through.
