- 1/4 cup pure Maple Syrup
- 2 tsp Chipotle Powder
- 2 large Sweet Potatoes, peeled and diced (about 4 cups)
- 1 lb Fresh Green Beans, trimmed
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat Your Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet.
- Prepare the Sweet Potatoes: Wash, peel, and cut the sweet potatoes into bite-sized cubes. Toss them in a bowl with olive oil, salt, and pepper until well-coated.
- Roast the Sweet Potatoes: Spread the sweet potato cubes on one side of the baking sheet in a single layer. Roast in the preheated oven for about 20 minutes until golden brown.
- Make the Maple-Chipotle Glaze: While the sweet potatoes are roasting, mix together maple syrup and chipotle powder in a small bowl until well combined.
- Prepare the Salmon: After 20 minutes, remove the baking sheet from the oven. Push the sweet potatoes aside and place salmon fillets on the other side of the sheet. Brush generously with the maple-chipotle glaze.
- Add Green Beans: Toss fresh green beans onto the baking sheet with a drizzle of olive oil, salt, and pepper.
- Finish Roasting: Return everything to the oven for another 15-20 minutes until salmon flakes easily with a fork.
- Serve: Transfer to plates and drizzle any remaining glaze over each serving.
