Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, baking powder, and sugar until well combined.
- In another bowl, mix eggs, milk, maple syrup, and vanilla extract until frothy.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumpy batter is fine.
- Fold in half of the crispy bacon bits into the batter gently.
- Spoon batter into prepared muffin cups, filling each about two-thirds full. Bake for 18–20 minutes or until golden brown.
- Let cool on a wire rack.
- In a small bowl, mix powdered sugar with milk until smooth and drizzlable.
- Drizzle over cooled cupcakes and sprinkle remaining bacon bits on top.
