  • 1/2 cup breadcrumbs
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/3 cup Korean BBQ sauce
  • 2 cups cooked white or brown rice
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup broccoli florets

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, minced garlic, and chopped green onion. Mix until evenly blended.
  2. Roll mixture into small balls about one inch in diameter and place on a parchment-lined baking sheet.
  3. Preheat your oven to 400°F (200°C) and bake meatballs for 15-20 minutes or until browned and cooked through.
  4. While meatballs are baking, heat a skillet over medium heat. Add oil and sauté sliced bell peppers and broccoli florets for about five minutes until tender.
  5. Once meatballs are done, drizzle Korean BBQ sauce over them while warm and toss gently to coat.
