Indulge in a heartwarming dish of tender chicken paired with creamy Yukon Gold potatoes, all cooked to perfection in your Instant Pot. Perfect for busy weeknights!

Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 lbs Yukon Gold potatoes (cut into chunks)
  • 4 cloves fresh garlic (minced)
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. 1. Prepare Your Ingredients: Chop the Yukon Gold potatoes into bite-sized pieces and mince the garlic.
  2. 2. Sauté the Chicken: Select the sauté function on your Instant Pot. Add olive oil and seasoned chicken breasts. Sauté each side until golden brown (about 3-4 minutes per side).
  3. 3. Add Garlic and Broth: Stir in minced garlic, then pour in one cup of chicken broth to deglaze the pot.
  4. 4. Load Up on Potatoes: Place chopped potatoes around and over the chicken. Sprinkle with thyme, salt, and pepper.
  5. 5. Pressure Cook: Seal the lid securely. Cook on high pressure for about 10 minutes.
  6. 6. Release Pressure and Serve: Allow for natural pressure release for five minutes before performing a quick release. Carefully open the lid, plate, and serve with a drizzle of broth.
