- 3–4 boneless, skinless chicken breasts, sliced thinly
- 3 cloves fresh garlic, minced
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 2 cups broccoli florets
- 1/4 cup low-sodium soy sauce
- 1/4 cup honey
- 1 tablespoon cornstarch
Instructions
- Chop all vegetables and slice the chicken into thin strips.
- In a bowl, mix soy sauce, honey, minced garlic, and cornstarch. Add chicken slices and coat well. Let marinate for 15 minutes.
- In a large skillet or wok, heat some oil over medium-high heat until shimmering.
- Add marinated chicken to the skillet and cook until golden brown and cooked through (about 5-7 minutes).
- Toss in bell peppers and broccoli florets; stir everything together and cook for another 3-5 minutes until veggies are tender-crisp.
- Pour any remaining marinade over the stir-fry and simmer for an additional couple of minutes until thickened.
- Serve over rice or noodles of your choice and enjoy!
