Ingredients

  • 34 boneless, skinless chicken breasts, sliced thinly
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 2 cups broccoli florets
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1 tablespoon cornstarch

Instructions

  1. Chop all vegetables and slice the chicken into thin strips.
  2. In a bowl, mix soy sauce, honey, minced garlic, and cornstarch. Add chicken slices and coat well. Let marinate for 15 minutes.
  3. In a large skillet or wok, heat some oil over medium-high heat until shimmering.
  4. Add marinated chicken to the skillet and cook until golden brown and cooked through (about 5-7 minutes).
  5. Toss in bell peppers and broccoli florets; stir everything together and cook for another 3-5 minutes until veggies are tender-crisp.
  6. Pour any remaining marinade over the stir-fry and simmer for an additional couple of minutes until thickened.
