Ingredients

  • 3 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 24 whole almonds
  • 2 cups dark chocolate chips
  • 2 tablespoons coconut oil

Instructions

  1. In a large mixing bowl, combine sweetened shredded coconut and sweetened condensed milk. Mix until well blended into a sticky consistency.
  2. Using your hands (wear gloves if desired), shape small portions of the mixture into bars about one inch long. Place them on a parchment-lined baking sheet.
  3. Firmly press one almond into the center of each coconut bar.
  4. Refrigerate the baking sheet for about one hour to firm up the bars.
  5. In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in short bursts (15-30 seconds), stirring until melted and smooth.
  6. Remove the chilled coconut bars from the fridge, dip each one into the melted chocolate using a fork, and let any excess drip back into the bowl before placing them back on parchment paper.
