- 3 cups sweetened shredded coconut
- 1 cup sweetened condensed milk
- 24 whole almonds
- 2 cups dark chocolate chips
- 2 tablespoons coconut oil
Instructions
- In a large mixing bowl, combine sweetened shredded coconut and sweetened condensed milk. Mix until well blended into a sticky consistency.
- Using your hands (wear gloves if desired), shape small portions of the mixture into bars about one inch long. Place them on a parchment-lined baking sheet.
- Firmly press one almond into the center of each coconut bar.
- Refrigerate the baking sheet for about one hour to firm up the bars.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave in short bursts (15-30 seconds), stirring until melted and smooth.
- Remove the chilled coconut bars from the fridge, dip each one into the melted chocolate using a fork, and let any excess drip back into the bowl before placing them back on parchment paper.
