Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
- In a medium bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking powder, ground ginger, cinnamon, nutmeg, and salt.
- In another bowl, beat the softened butter until creamy using an electric mixer.
- Add eggs one at a time into the butter mixture until well combined.
- Stir in molasses until smooth.
- Gradually add the dry ingredients to the wet mixture while stirring gently until just combined.
- Spoon batter into prepared cupcake liners about two-thirds full.
- Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
- Transfer cupcakes to a wire rack to cool completely before frosting with cream cheese frosting or your favorite topping.
