Ingredients

  • 2 large eggs
  • ¾ cup molasses
  • ½ cup unsalted butter (softened)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a medium bowl, whisk together all-purpose flour, granulated sugar, brown sugar, baking powder, ground ginger, cinnamon, nutmeg, and salt.
  3. In another bowl, beat the softened butter until creamy using an electric mixer.
  4. Add eggs one at a time into the butter mixture until well combined.
  5. Stir in molasses until smooth.
  6. Gradually add the dry ingredients to the wet mixture while stirring gently until just combined.
  7. Spoon batter into prepared cupcake liners about two-thirds full.
  8. Bake for about 18-20 minutes or until a toothpick inserted comes out clean.
  9. Transfer cupcakes to a wire rack to cool completely before frosting with cream cheese frosting or your favorite topping.
