- 4–6 duck legs
- 2 tbsp kosher salt
- 4 sprigs fresh thyme
- 4–5 garlic cloves, smashed
- Duck fat for cooking
- 4 tart apples (like Granny Smith), peeled and chopped
- 1/2 cup sugar (adjust based on apple variety)
- 1 cinnamon stick
Instructions
- Season the duck legs generously with salt and fresh thyme. Refrigerate for at least 1 hour or overnight.
- In a large pot or Dutch oven, melt enough duck fat to submerge the seasoned duck legs completely over medium heat.
- Carefully place the seasoned duck legs in the melted duck fat. Cook slowly over low heat for about 2 hours until tender.
- Remove duck legs from fat and place them on a baking sheet. Broil in the oven for about 5 minutes or until skin is crispy.
- In a separate pot, combine chopped apples, sugar, and cinnamon stick. Cook over medium heat until apples are soft (about 15 minutes).
- Remove from heat and blend until smooth; discard the cinnamon stick.
