  • 2 tbsp kosher salt
  • 4 sprigs fresh thyme
  • 45 garlic cloves, smashed
  • Duck fat for cooking
  • 4 tart apples (like Granny Smith), peeled and chopped
  • 1/2 cup sugar (adjust based on apple variety)
  • 1 cinnamon stick

Instructions

  1. Season the duck legs generously with salt and fresh thyme. Refrigerate for at least 1 hour or overnight.
  2. In a large pot or Dutch oven, melt enough duck fat to submerge the seasoned duck legs completely over medium heat.
  3. Carefully place the seasoned duck legs in the melted duck fat. Cook slowly over low heat for about 2 hours until tender.
  4. Remove duck legs from fat and place them on a baking sheet. Broil in the oven for about 5 minutes or until skin is crispy.
  5. In a separate pot, combine chopped apples, sugar, and cinnamon stick. Cook over medium heat until apples are soft (about 15 minutes).
  6. Remove from heat and blend until smooth; discard the cinnamon stick.
