Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- In a bowl, combine coconut milk, curry powder, minced garlic, grated ginger, and lime juice. Stir until well mixed.
- Add the shrimp to the marinade and let them soak for at least 30 minutes for maximum flavor absorption.
- Heat oil in a skillet over medium heat. Add the marinated shrimp along with all of the marinade. Sauté until the shrimp turn pink and opaque, about 5-7 minutes.
- Transfer to a serving platter and garnish with chopped cilantro if desired.
