Description

Curry shrimp appetizer is a flavorful, tropical-inspired dish featuring succulent shrimp marinated in creamy coconut milk and aromatic spices, perfect for impressing your guests at any gathering.


Ingredients

  • 1 cup full-fat coconut milk
  • 2 tbsp curry powder
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • Juice of 1 lime
  • 1 lb fresh or thawed frozen shrimp, peeled and deveined
  • 2 tbsp oil for cooking
  • Chopped cilantro (for garnish)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, combine coconut milk, curry powder, minced garlic, grated ginger, and lime juice. Stir until well mixed.
  3. Add the shrimp to the marinade and let them soak for at least 30 minutes for maximum flavor absorption.
  4. Heat oil in a skillet over medium heat. Add the marinated shrimp along with all of the marinade. Sauté until the shrimp turn pink and opaque, about 5-7 minutes.
  5. Transfer to a serving platter and garnish with chopped cilantro if desired.
