  • 34 boneless, skinless chicken breasts
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 4 cloves fresh garlic, minced
  • 1 medium yellow onion, diced
  • 8 oz cream cheese, softened
  • 1 can (4 oz) mild green chiles

Instructions

  1. Preheat your stovetop on medium heat.
  2. In a large pot, heat 2 tbsp olive oil. Add diced onions and minced garlic; sauté until golden brown, about 5 minutes.
  3. Add boneless chicken breasts and chicken broth to the pot. Bring to a gentle simmer and cook for about 15 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot, shred it, and return it to the pot. Stir in cream cheese until fully melted into the broth.
  5. Add drained cannellini beans and green chiles to the mixture. Season with salt and pepper, then let it simmer for another 10 minutes.
  6. Serve hot in bowls, garnished with fresh herbs or crushed tortilla chips if desired.
