- 3–4 boneless, skinless chicken breasts
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 4 cloves fresh garlic, minced
- 1 medium yellow onion, diced
- 8 oz cream cheese, softened
- 1 can (4 oz) mild green chiles
Instructions
- Preheat your stovetop on medium heat.
- In a large pot, heat 2 tbsp olive oil. Add diced onions and minced garlic; sauté until golden brown, about 5 minutes.
- Add boneless chicken breasts and chicken broth to the pot. Bring to a gentle simmer and cook for about 15 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it, and return it to the pot. Stir in cream cheese until fully melted into the broth.
- Add drained cannellini beans and green chiles to the mixture. Season with salt and pepper, then let it simmer for another 10 minutes.
- Serve hot in bowls, garnished with fresh herbs or crushed tortilla chips if desired.
