- 3–4 boneless, skinless chicken breasts
- 3 cloves fresh garlic, minced
- 1 medium onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 tsp dried Italian herbs (oregano and basil)
Instructions
- Heat 2 tbsp of olive oil in a large pot over medium heat. Add diced onion and minced garlic. Sauté for about two minutes until fragrant.
- Add the chicken breasts to the pot. Cook for about five minutes on each side until golden brown. Season generously with salt and pepper.
- Add chopped carrots and celery to the pot. Stir everything together and let cook for around five minutes until veggies soften.
- Pour in the chicken broth along with dried Italian herbs. Bring to a gentle boil, then reduce heat and simmer for about twenty minutes.
- Once the chicken is cooked through (internal temperature of 165°F), remove it from the pot and shred into bite-sized pieces. Return to the pot with heavy cream and stir until combined.
- Ladle generous portions into bowls and garnish with fresh herbs if desired.
