Ingredients
Scale
- 2 cups fresh cranberries
- 3/4 cup granulated sugar
- 1 cup heavy whipping cream, chilled
- 1 tsp pure vanilla extract
- 1 tbsp gelatin powder
- 2 tbsp cold water
Instructions
- Prepare the Cranberry Mixture: Rinse the fresh cranberries under cold water. In a medium saucepan over medium heat, combine cranberries and sugar with one cup of water. Cook until the cranberries burst and soften, about 10 minutes, stirring occasionally.
- Blend It Smooth: Allow the mixture to cool slightly before transferring it to a blender or food processor. Blend until smooth, keeping some texture if desired.
- Make It Creamy: In a separate bowl, whip the heavy cream with vanilla extract until soft peaks form. Gently fold in the cooled cranberry mixture until fully combined.
- Add Gelatin: In a small bowl, sprinkle gelatin powder over two tablespoons of cold water and let it bloom for about five minutes. Heat it gently in the microwave for about ten seconds or until dissolved, then stir into the cranberry-cream mixture.
- Chill Out: Spoon or pipe your mousse into individual cups or glasses. Cover with plastic wrap and chill in the refrigerator for at least two hours until set.
- Serve & Enjoy: Garnish with extra whipped cream or crushed graham crackers before serving.

Keywords: Frozen cranberries can be used if fresh ones are unavailable; they work equally well. For an extra flavor twist, consider adding orange zest to the mixture.
