Description

This festive Cranberry Christmas Cake combines tart cranberries and warm spices for a moist, flavorful dessert that brightens any holiday gathering.

Ingredients

Scale
  • 2 cups fresh cranberries
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup whole milk

Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour a bundt pan or preferred cake pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, cinnamon, and sugar.
  3. Cream Butter and Sugar: In another bowl, beat softened butter until creamy. Gradually add sugar and beat until light and fluffy (about three minutes).
  4. Combine Wet Ingredients: Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Pour in the milk and mix until combined.
  5. Fold in Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, folding gently until just combined. Fold in fresh cranberries.
  6. Bake: Pour the batter into the prepared pan. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean. Allow cooling before transferring to a wire rack.
  7. Serve: Slice and serve with whipped cream or dusted powdered sugar if desired.
