  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar until combined.
  3. In another bowl, cream softened butter until fluffy. Gradually add sugar and mix until light and airy (about three minutes). Add eggs one at a time followed by vanilla extract.
  4. Gradually incorporate the dry mixture into the wet mixture until just combined.
  5. Gently fold in cranberries using a spatula until evenly distributed.
  6. Pour batter into the prepared pan and smooth out the top. Bake for about 30–35 minutes or until golden brown and a toothpick inserted comes out clean.
  7. In a bowl, beat cream cheese until smooth. Gradually add powdered sugar and milk until desired consistency is reached.
  8. Once the cake cools completely, spread frosting over the top.
