Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a mixing bowl, whisk together flour, baking powder, salt, and sugar until combined.
- In another bowl, cream softened butter until fluffy. Gradually add sugar and mix until light and airy (about three minutes). Add eggs one at a time followed by vanilla extract.
- Gradually incorporate the dry mixture into the wet mixture until just combined.
- Gently fold in cranberries using a spatula until evenly distributed.
- Pour batter into the prepared pan and smooth out the top. Bake for about 30–35 minutes or until golden brown and a toothpick inserted comes out clean.
- In a bowl, beat cream cheese until smooth. Gradually add powdered sugar and milk until desired consistency is reached.
- Once the cake cools completely, spread frosting over the top.
