Description

Enjoy the rich, creamy goodness of Christmas cheesecake cookies, where soft cookies embrace a luscious cheesecake center, perfect for holiday gatherings or cozy nights in.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until just combined.
  5. In a separate bowl, mix softened cream cheese and powdered sugar until smooth. Stir in vanilla extract, cinnamon, and nutmeg.
  6. Scoop cookie dough onto prepared baking sheets using an ice cream scoop. Create a small indentation in each scoop and fill it with about a teaspoon of cheesecake filling before covering with more dough.
  7. Bake for about 12-15 minutes or until golden around the edges but still soft in the center.
  8. Let cool slightly before serving warm.
