  • 2 cups Yukon Gold or russet potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar or pepper jack cheese
  • Salt and pepper to taste
  • 4 large flour tortillas
  • Sour cream (optional)
  • Fresh salsa (optional)
  • Avocado slices (optional)

Instructions

  1. In a skillet over medium heat, add a splash of olive oil and cook the diced potatoes with salt until tender and golden brown (about 10-12 minutes).
  2. In another skillet, cook the turkey sausage over medium-high heat until browned and crumbly (around 8-10 minutes).
  3. Push the sausage aside in the skillet, crack in the eggs, and scramble until cooked through (about 5 minutes).
  4. Combine the cooked potatoes, sausage, and scrambled eggs in one skillet. Sprinkle cheese on top while still hot to melt.
  5. Slightly warm the tortillas for easier wrapping. Spoon generous filling onto each tortilla.
