Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup softened butter
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 tsp peppermint extract
  • 2 cups white chocolate chips
  • Crushed peppermint candies (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.
  3. In another large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  4. Add the eggs one at a time and mix in peppermint extract until thoroughly combined.
  5. Gradually add the dry ingredients into the wet mixture, stirring until no flour streaks remain.
  6. Scoop tablespoon-sized balls onto prepared baking sheets, leaving space between each cookie.
  7. Bake for about 10 minutes or until set but still soft in the center. Allow to cool on the baking sheet for five minutes before transferring to wire racks.
  8. Melt white chocolate chips over low heat or in short bursts in a microwave until smooth.
  9. Dip each cooled cookie halfway into the melted white chocolate and place back on parchment paper.
  10. While the chocolate is still warm, sprinkle crushed peppermint candies on top if desired.
