- 1 cup softened butter
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 tsp peppermint extract
- 2 cups white chocolate chips
- Crushed peppermint candies (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.
- In another large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
- Add the eggs one at a time and mix in peppermint extract until thoroughly combined.
- Gradually add the dry ingredients into the wet mixture, stirring until no flour streaks remain.
- Scoop tablespoon-sized balls onto prepared baking sheets, leaving space between each cookie.
- Bake for about 10 minutes or until set but still soft in the center. Allow to cool on the baking sheet for five minutes before transferring to wire racks.
- Melt white chocolate chips over low heat or in short bursts in a microwave until smooth.
- Dip each cooled cookie halfway into the melted white chocolate and place back on parchment paper.
- While the chocolate is still warm, sprinkle crushed peppermint candies on top if desired.
