  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp cumin powder
  • 1 tsp smoked paprika
  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 1 cup Greek yogurt
  • 2 tbsp tahini
  • Zest of 1 lemon

Instructions

  1. In a large bowl, mix olive oil, minced garlic, cumin powder, smoked paprika, lemon juice, salt, and pepper.
  2. Add boneless chicken thighs and coat thoroughly in the marinade. Cover and refrigerate for at least one hour or overnight.
  3. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Place marinated chicken on the prepared baking sheet and bake for 25-30 minutes until cooked through and golden brown.
  5. Once done, let the chicken rest for five minutes before slicing into thin strips.
  6. In a bowl, combine Greek yogurt, tahini, lemon zest, salt, and pepper. Mix until smooth.
  7. Warm pita or flatbreads briefly on a skillet or microwave.
  8. Layer sliced chicken onto each piece of bread and drizzle with the prepared sauce.
  9. Top with fresh vegetables like lettuce, cucumber slices, or tomatoes.
