Description

  • 34 medium Russet potatoes
  • Salt and pepper to taste
  • 2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 3 cloves fresh garlic, minced
  • 2 tablespoons butter
  • Fresh thyme or rosemary, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and peel the Russet potatoes. Slice them thinly (about an eighth-inch thick) using a knife or mandoline slicer.
  3. In a saucepan over medium heat, melt the butter. Add minced garlic and sauté for one minute until fragrant. Pour in the heavy cream and stir in half of the shredded cheddar cheese until melted.
  4. Grease a baking dish. Layer potato slices, pouring part of the cheesy mixture over each layer while sprinkling with salt and pepper.
  5. Cover the baking dish with aluminum foil and bake for about 45 minutes. Remove the foil, sprinkle on remaining cheese, and bake uncovered for another 15-20 minutes until bubbly and golden.
  6. Allow it to sit for five minutes before serving to let it set. Serve warm alongside your favorite protein or veggies.
