- 2 slices sourdough bread
- 2 tbsp butter (divided)
- 1/2 cup sharp cheddar cheese (shredded)
- 1 medium fresh apple (sliced, preferably Granny Smith or Honeycrisp)
- 1 medium yellow onion (thinly sliced)
- Salt and pepper to taste
Instructions
- Melt 1 tablespoon of butter in a skillet over medium heat.
- Add sliced onions and a pinch of salt. Stir occasionally until golden brown, about 15-20 minutes.
- While onions are caramelizing, core and thinly slice the apple.
- On one slice of sourdough bread, layer half of the cheddar cheese, followed by caramelized onions and apple slices. Top with remaining cheddar cheese and place the second slice of bread on top.
- Melt another tablespoon of butter in the same skillet over medium heat.
- Add the assembled sandwich to the skillet and grill each side until golden brown, around 3-4 minutes per side.
- Transfer sandwich to a cutting board. Let it cool slightly before slicing in half. Serve warm.
