Description

Cajun Sausage with Brussels & Butternut Squash is a vibrant, one-pan dish that combines spicy sausage, caramelized Brussels sprouts, and sweet butternut squash for an explosion of flavors.

  • 1 lb Cajun Sausage (smoked or fresh, spicy or mild)
  • 1 lb Brussels Sprouts (halved)
  • 1 medium Butternut Squash (peeled and cubed)
  • 3 tbsp Olive Oil (extra virgin)
  • 1 tsp Garlic Powder
  • 2 tsp Cajun Seasoning
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Chop the Brussels sprouts in half and cube the butternut squash into bite-sized pieces.
  3. In a large bowl, combine Brussels sprouts and butternut squash. Drizzle with olive oil, then sprinkle garlic powder, salt, pepper, and Cajun seasoning. Toss until well coated.
  4. Slice the Cajun sausage into rounds and add to the veggie mix. Toss to combine.
  5. Spread everything evenly on the baking sheet and roast for about 25-30 minutes until golden brown and tender.
  6. Remove from the oven and let cool slightly before serving. Enjoy it as-is or with crusty bread or rice.
