- 1 lb Brussels Sprouts (halved)
- 1 medium Butternut Squash (peeled and cubed)
- 3 tbsp Olive Oil (extra virgin)
- 1 tsp Garlic Powder
- 2 tsp Cajun Seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Chop the Brussels sprouts in half and cube the butternut squash into bite-sized pieces.
- In a large bowl, combine Brussels sprouts and butternut squash. Drizzle with olive oil, then sprinkle garlic powder, salt, pepper, and Cajun seasoning. Toss until well coated.
- Slice the Cajun sausage into rounds and add to the veggie mix. Toss to combine.
- Spread everything evenly on the baking sheet and roast for about 25-30 minutes until golden brown and tender.
- Remove from the oven and let cool slightly before serving. Enjoy it as-is or with crusty bread or rice.
