Ingredients

  • 8 oz pasta (penne or fusilli)
  • 8 oz block feta cheese
  • 2 cups cherry tomatoes
  • 4 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In an oven-safe baking dish, pour in 2 tablespoons of olive oil. Add the cherry tomatoes and place the block of feta cheese in the center.
  3. Sprinkle minced garlic over the tomatoes and feta. Season with salt and pepper, then drizzle with another tablespoon of olive oil.
  4. Roast in the preheated oven for 25-30 minutes until the tomatoes burst and the feta melts into a creamy sauce.
  5. While roasting, cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  6. Mix the roasted tomatoes and melted feta with the drained pasta. If too thick, add reserved pasta water until desired consistency is reached. Garnish with fresh basil before serving.
