- 8 oz pasta (penne or fusilli)
- 8 oz block feta cheese
- 2 cups cherry tomatoes
- 4 tbsp extra virgin olive oil
- 4 cloves garlic, minced
- Fresh basil leaves for garnish
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In an oven-safe baking dish, pour in 2 tablespoons of olive oil. Add the cherry tomatoes and place the block of feta cheese in the center.
- Sprinkle minced garlic over the tomatoes and feta. Season with salt and pepper, then drizzle with another tablespoon of olive oil.
- Roast in the preheated oven for 25-30 minutes until the tomatoes burst and the feta melts into a creamy sauce.
- While roasting, cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Mix the roasted tomatoes and melted feta with the drained pasta. If too thick, add reserved pasta water until desired consistency is reached. Garnish with fresh basil before serving.
